Sodexo’s ‘Baker Dave’ Creates 575 Pound Cake for Bryant University’s 150th Anniversary

Smithfield, Rhode Island – The sesquicentennial celebration at Bryant University was made sweeter by a 575 pound cake resembling the campus entrance.

The dessert took center stage as university President Ronald Machtley was joined by Gov. Lincoln Chafee and Congressman Cicilline, Bryant Chairman of the Board Michael E. Fisher, students, faculty, alumni and others for the celebration on Friday.

Sodexo, the university’s dining services partner, sent for “Baker Dave” Okapal of Temple University to design and execute the masterful dessert. He is a silver medal winner of the “Extreme Wedding Cakes” competition on Food Network Challenge and designs cakes for Sodexo’s partner campuses throughout the country.

According to Baker Dave, the cake took nearly forty hours to create, could serve 1,200 people, and consisted of approximately 140 pounds of butter, 160 pounds of sugar 50 pounds of eggs, 70 pounds of flour, 20 pounds of chocolate and 60 pounds of fondant.
